During the Vietnamese, Quang Nam is famous for its simple but unique food. Both of the dry noodle and noodle soups have typical taste with a combination of many vegetables and spices. The two noodles that are well known during internationals are Quang noodle and Cao Lau.
Quang noodle is basic dish of Hoi An people. For the internationals, it is voted as one of top 12 Vietnamese dishes has culture values and outstanding for taste of Asia. The basic Quang noodle is made from pork and shrimp, and then verified with chicken, jellyfish or beef. Quang noodle is made from coated, sticky and fragrant rice cake, finely grounded without added any materials to keep its rare taste. The sauce is not filled as Pho or other noodles but only approximately little, and fragrant spicy, tasty thanks to secret special recipe. Some people say that long time ago, the rich people preferred to come to the luxury restaurants, sat on the high building to watch the streets and ordered the dish. So the dish’s name is Cao Lau. Some people believe the dish is from Chinese people but no one confirm about that. It is difficult to know where Cao Lau comes from, but the dish came to Hoi An a long time ago and it is must-try dish once visiting the small and peaceful city.

The essence of Cao Lau is the noodle, which is prepared meticulously from fragrant rice soaked with coal powder water and then soaked, cut into individual fibers and then steamed and dried. Cao Lau is served with fried pork skin, meat, streamed eggs and bean sprouts.
